Mixed Millets Flour Paniaram
Ingredients:
Mixed Millets flour - 1 cup
Curd - 1 ½ cup
Oil - 4 /5 tsps
Mustard seeds - ½
Bengal gram dal -½ tsp
Urad dal - ½ tsp
Green chillies - 2 or 3
Ginger - 1 inch or so
Curry leaves - a few
Coriander leaves - a handful
Salt - to taste
Method:
Mix the Millets flour and curd in a bowl
Briskly mix together after adding salt - Idli batter consistency
Allow the batter to rest for 30 mins
Meanwhile chop the green chillies and grate the ginger
Now heat oil in a pan
Crackle mustard seeds
Then roast the gram dal, urad dal, green chillies and grated ginger - add curry leaves too
Add this tempering to the resting batter
Add some coriander leaves and mix briskly
Heat a Kuzhi Paniaram mould
Add some oil to all the slots of the mould
Fill the slots with ladle of batter
Cover and cook over medium flame
Flip the Paniarams to the other side
Add some more oil and cook for some more time
Serve the healthy Millets Paniaram with any chutney
