In a small bowl combine graham cracker crumbs, sugar and butter. Stir until they are well mixed. Use the back of a spoon to press 1 to 2 tablespoons of the graham cracker mixture into each heart-shaped mold. Bake for 5 minutes. Remove from the oven and allow crusts to cool.In a stand mixer or with a hand mixer beat room temperature cream cheese on medium until it’s smooth. Be sure to scrape the sides of the bowl well. Slowly add sugar and mix well. Add eggs, one at a time, and mix just until they are incorporated. Add vanilla extract.Pour mixture into 6 individual bowls. Add food colouring and stir until you’ve achieved the colours you want. Pour cheesecake batter into each mold. Place mold in a large baking dish and create a water bath by filling the baking dish half way with boiling water. Bake at 325°F for between 20 and 25 minutes or until cheesecake is set. Remove from the oven and allow cheesecakes to cool. Freeze for at least 2 hours before removing the cheesecakes from their molds.
