Creamy and decadent chicken tikkas marinated in hung curd and a variety of herbs, then grilled to perfection.

HERB CHICKEN TIKKA

Ingredients

10-12 fresh coriander sprigs
10-12 fresh mint leaves
1-2 fresh oregano sprigs
1-2 fresh thyme sprigs
1-2 fresh rosemary sprigs
300 grams chicken leg boneless, cut into 1 inch pieces
1 tbsp lemon juice
1½ tbsps ginger-garlic paste
1 tsp green chilli paste
¼ cup hung yogurt
1½ tbsps roasted gram flour (besan)
2 tbsps cheese spread
2-3 tbsps oil
Chaat masala for sprinkling
To serve
Onion rings
Green chutney
Lemon wedges
Mint sprigs

Method

1. Finely chop coriander sprigs and mint leaves. Pluck the leaves of oregano sprigs, thyme sprigs and rosemary sprigs and finely chop them.
2. Take chicken in a large bowl, add lemon juice, ginger-garlic paste, green chilli and the chopped herbs. Add salt and mix well. Set aside for 10-15 minutes.
3. Take hung yogurt into another bowl, add roasted gram flour and cheese spread and whisk till smooth.
4. Add the marinated chicken and mix well. Set aside for 30 minutes.
5. Heat oil in a non-stick grill pan. Place the chicken pieces on it and cook on high heat for 2-3 minutes. Flip and cook the other side on high heat for 2-3 minutes. Reduce the heat to medium and continue to cook till chicken is done.
6. Arrange the chicken on to a serving plate. Sprinkle chaat masala and serve hot with onion rings, green chutney, lemon wedges and mint sprigs.
