HOMEMADE CREPES RECIPE I Europian cousin of American pancakes

In this episode, I'd like to share with you my version of crepes recipe. It is easy to prepare, and you can do so much with a crepe. You can serve them with all your favorite toppings, either savory or sweet. I use them to prepare Turkish "Su Brei", (water pie) and will share the recipe in the next video. This version really tastes amazing and so much easier than real Su Brei.

INGREDIENTS
3 small eggs
1 cup milk
1/2 cup sparkling mineral water (or water)
1 cup flour (spooned and leveled)
1 tsp lemon juice
2 tbsp olive oil
A pinch of salt
Some butter to fry

DIRECTIONS
Add 1 tsp fresh lemon juice into the milk, set aside for 5 minutes.
In a medium bowl, beat eggs slightly with a wire whisk.
Add a pinch of salt.
Add 2 tbsp olive oil and beat.
Add 1/2 cup mineral water (or water), beat again.
Sift flour on top, mix gently.
Gradually add the milk, while beating.
If there are any lumps, I prefer to pass the batter through a sieve into another bowl, rather than beating for longer.
Heat a non-stick pan, over medium heat, I use a large pan.
Grease pan with butter.
Mix the batter before making each crepe, then scoop about 1/3 cup batter into the center of the pan.
Gently swirl the pan, so that the batter coats the surface evenly.
Cook until the liquid batter becomes solid.
Pick up the sides of the crepe, if it lifts easily then the crepe is ready to be flipped.
Then loosen with a spatula, flip and cook the other side.
Transfer cooked crepe to a plate.
Let the pan cool for 10-15 seconds and wipe with some paper towels, to remove any traces of butter.
Put the pan back on the burner, grease with a little more butter.
Then repeat the same and continue to cook until all is done.
Stack cooked crepes on the plate.
The first side takes me about 1.5 minutes to cook and the other side is 40 seconds.
And I make 9 crepes, using a large pan.
But the last one is usually smaller than the others :)
Transfer crepes to a serving dish, fill them with your choice of filling, fold and enjoy.
You can also serve them simply, with some dusted powdered sugar.
