Ingredients for Schezwan Sauce
Kashmiri Red Chilli - कश्मीरी लाल मिर्च, 15 nos (15 gms)
Red Chilli - लाल मिर्च, 20 nos (5 gms,)
Water - पानी - 3/4 Cup
Ginger - अदरक - 2 inch baton
Oil - तेल - 1/4 Cup
Black Pepper - काली मिर्च - 1/2 tsp, coarsely ground
Oregano - ऑरेगैनो - 1/2 tsp (optional)
Coriander Stems - धनिया डंठल - 2 tbsp
Salt - नमक - 1 tsp
Sugar - चीनी - 2 tsp
Soya Sauce - सोया सॉस - 1/2 tsp
Tomato Sauce - टमाटर सॉस - 2 tbsp
Vinegar - सिरका - 2 tbsp

How to prepare Schezwan Sauce?
1. Take 15 grams Kashmiri red chilies and 5 grams dried red chilies.
2. Take 3/4 cup of water in a vessel and bring it to a boil.
3. Add both the chilies to the water, cover the vessel, and leave them for 20 minutes.
4. Add chilies to the mixer blender after 20 minutes using a tong.
5. Add 2-inch ginger chunks, 2 tbsp of water to the mixer, and run the mixer to prepare a fine paste.
6. Heat 1/4 cup of sesame oil/refined oil in the pan.
7. When the oil is hot, add red chilies paste and roast it for a minute or two.
8. Add 1/2 tsp of crushed black pepper, 1 tsp of oregano, 2 tbsp of green coriander stems to the masala and roast for 2 minutes.
9. Add 1 tsp of salt, 2 tsp of sugar, 1/2 cup water to the sauce, and cook covered for 15 minutes over low heat.
10. Add 1/2 tsp of soya sauce, 2 tbsp of tomato sauce, apple cider vinegar to the sauce and mix well.
11. Turn off the flame and allow the sauce to cool. Schezwan sauce is ready to be served.
