It can be used as an accompaniment, or used in cooking – such as to coat fried Manchurian balls, sauté deep-fried potatoes, etc. It tends to get thick over time, so add a little water and adjust the consistency according to the requirement. Preparation Time: 15 minutes.Cooking Time: 3 minutes.Makes 1.25 cups (17 tbsp ).1½ tbsp finely chopped garlic (lehsun)¼ cup Schezuan sauce¼ cup chilli sauce1 tbsp cornflour1½ tbsp oil½ tsp finely chopped ginger (adrak)1 tsp finely chopped green chillies½ cup finely chopped spring onions whites and greens½ tsp soy sauceSalt to taste1. Combine the cornflour and ¾ cup of water in a bowl and mix very well. Keep aside.2. Heat the oil in a broad non-stick pan, add the garlic, ginger and green chillies and sauté on a medium flame for 30 seconds.3. Add the spring onions, Schezuan sauce, chilli sauce and soya sauce, mix well and cook on a medium flame for 1 minute, while stirring occasionally.4. Add the cornflour-water mixture and salt, mix well and cook on a medium flame for 1 minute, while stirring continuously. Use as required.
