Hot Garlic Sauce | Dips Sauces and More | Sanjeev Kapoor Khazana

Spicy red chilli garlic sauce perfect for your party starters or to toss your favourite stir fry recipes.

HOT GARLIC SAUCE

Ingredients

10 dried red chillies, seeded and soaked
1-2 tablespoons oil
10-12 garlic cloves, thinly sliced
1½ teaspoons soy sauce
Salt to taste
Crushed black peppercorns to taste
2 tablespoons tomato ketchup
½ teaspoon sugar
1½ teaspoons vinegar
250 grams boneless chicken, cut into 1 inch pieces
1 medium onion, roughly chopped
1 medium tomato, roughly chopped
1 medium yellow capsicum, roughly chopped
¼ cup corn flour slurry
Spring onion greens for garnishing

Method

1. Drain and blend red chillies to a fine paste. Add a little water.
2. Heat oil in a non-stick pan. Add garlic and sauté. Add red chilli paste and cook till the oil separates.
3. Add ¼ cup water and mix well for a minute. Add soy sauce, salt, pepper powder, tomato ketchup, sugar, mix and cook for a minute. Add vinegar and mix.
4. Transfer some of the sauce to a serving plate and set aside.
5. Add chicken pieces to the remaining sauce and mix well. Add salt and toss. Add onions, tomatoes, yellow capsicum, ¼ cup water, cornstarch slurry and toss once again. Remove from heat and garnish with spring onion springs.
6. Garnish hot garlic sauce with spring onion greens and serve as a sauce with the prepared chicken dish.
