Spicy red chilli garlic sauce perfect for your party starters or to toss your favourite stir fry recipes.HOT GARLIC SAUCEIngredients 10 dried red chillies, seeded and soaked 1-2 tablespoons oil 10-12 garlic cloves, thinly sliced 1½ teaspoons soy sauceSalt to tasteCrushed black peppercorns to taste2 tablespoons tomato ketchup½ teaspoon sugar1½ teaspoons vinegar250 grams boneless chicken, cut into 1 inch pieces1 medium onion, roughly chopped1 medium tomato, roughly chopped1 medium yellow capsicum, roughly chopped ¼ cup corn flour slurrySpring onion greens for garnishing Method1. Drain and blend red chillies to a fine paste. Add a little water. 2. Heat oil in a non-stick pan. Add garlic and sauté. Add red chilli paste and cook till the oil separates.3. Add ¼ cup water and mix well for a minute. Add soy sauce, salt, pepper powder, tomato ketchup, sugar, mix and cook for a minute. Add vinegar and mix. 4. Transfer some of the sauce to a serving plate and set aside. 5. Add chicken pieces to the remaining sauce and mix well. Add salt and toss. Add onions, tomatoes, yellow capsicum, ¼ cup water, cornstarch slurry and toss once again. Remove from heat and garnish with spring onion springs. 6.
