HOW TO COOK TURKISH MANTI (Turkish Ravioli)

In this episode, I'd like to show you how to cook homemade Turkish MANTI (ravioli). When you have some MANTI on hand, it is so easy to cook and serve. I usually serve it with salad and some fresh bread, if desired. Once you cook, please make sure to serve it immediately. Just like pasta, MANTI waits for no one :)

INGREDIENTS (2 servings)
400 gr. (14 oz) uncooked MANTI
6 real tablespoonful thick yogurt
6 cloves garlic
2 real tablespoonful butter
1 tbsp olive oil
1 tsp tomato paste
1/2 tsp sweet pepper paste
Sweet paprika
Dried mint flakes, sumac
Chili flakes (optional)
Salt & black pepper

DIRECTIONS
Fill a large pan with water and bring to a boil, over medium high heat.
Meanwhile peel and crush garlic cloves, then combine with yogurt.
Add a tiny pinch of salt and 4-5 tbsp water, beat then set aside.
For the sauce: heat 1 tbsp of each: olive oil and butter in a sauce pan.
Add the tomato and pepper paste, mix.
Add a pinch of salt, black pepper and sweet paprika, mix well.
Add 1/3 cup water, mix and let simmer, over medium low heat.
Add 1/2 tsp salt into the boiling water.
(If using frozen MANTI, make sure to rinse and drain them before adding into the boiling water.)
Add MANTI carefully into the boiling water, mix.
Bring to a boil, over medium high heat, leaving the lid slightly ajar, stirring occasionally.
Then cook uncovered for 10 to 15 minutes according to taste, stirring occasionally.
Scoop 2-3 spoons of MANTI stock into the sauce, mix.
Adjust seasoning.
Check MANTI for doneness and reduce heat to the lowest possible setting.
Then drain most of the MANTI stock.
(Might wanna reserve the stock, it is so yummy.)
Put the pan back on the fire, add 1 cup room temp water and the sauce and mix, then turn off the heat.
Melt 1 real tablespoonful butter in a small pan, meanwhile place MANTI into a serving dish.
Add 1 tsp sweet paprika into the melted butter and cook for about 1 minute, stirring constantly then turn off the heat.
Place 3 real tablespoonful garlicky yogurt on top of MANTI.
Sprinkle some dried mint flakes, sumac and chili flakes, if desired.
Last but not least, drizzle some butter&sweet paprika sauce on top and serve immediately.
