This whole fish came straight to my door about 2 days after it was wild caught IN ALASKA on the copper river and it was very very special to work with. Copper River Seafoods (https://www.copperriversalmon.org ) let me play around with a coho salmon and it was probably one of the freshest pieces of seafood I've worked with other than being able catch it myself.
