Ingredients

PORK ROAST:
1 (2 to 3 pound) pork loin trimmed and tied
1 teaspoons salt
1/2 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons dijon mustard
1 tablespoon apple cider vinegar

APPLE GLAZE:
2 tablespoons butter
1 tablespoon cornstarch
1 cup apple juice
1 tablespoon dijon mustard
1 tablespoon brown sugar
1 teaspoon apple cider vinegar

1 00:00:31 - Preheat oven to 375 degrees. Season the pork loin with salt and pepper.

2 00:00:44 - Heat the olive oil in a heavy, oven-safe skillet over medium-high heat. Sear the loin in the skillet until all sides are browned, about 2 to 3 minutes per side.

3 00:01:14 - In a small bowl, whisk together dijon mustard and apple cider vinegar. Brush over pork roast.

4 00:01:30 - Place skillet in the oven and cook pork to an internal temperature of 145 degrees, about 30 to 40 minutes depending on the size of the roast. Use a probe thermometer for accuracy.

5 00:01:50 - Meanwhile, make the apple glaze by melting the butter in a saucepan over medium high heat. Whisk in cornstarch until all specks of white are absorbed. Pour in apple juice and whisk in dijon mustard, brown sugar, and cider vinegar. Continue to whisk until sauce is thickened, which should only take a couple of minutes.
