Makes 6-8 servings

Bread croutons
2 tbsp (30g) olive oil
1 garlic clove , minced
2 cups bread , cut into 3/4-inch (2cm) cubes
2 tbsp (10g) Parmesan cheese , grated
salt and pepper to taste

For the chicken
2 skinless, boneless chicken breasts (about 1 pound 450g) , pounded -ich (1cm) thin
salt and pepper to taste
1 tbsp vegetable oil , for cooking

Caesar dressing
2 cloves garlic , minced
2 anchovy fillets
1 tsp (5g) Dijon mustard
1 tbsp (15ml) lemon juice
1/2 tsp (3g) Worcestershire sauce
1 egg yolk
1/2 cup (110g) extra-virgin olive oil
2 tbsp (10g) Parmesan cheese , grated
salt and pepper to taste

For the salad
7 oz (200g) fusilli pasta
1 head Romaine lettuce, about 5-6 cups
Parmesan cheese shavings
