Ingredients

2 tablespoons olive oil
1 white onion, diced
2 cups white jasmine rice
4 cups chicken broth
1 teaspoon salt
1/3 cup lime juice
2 tablespoons butter
1/4 freshly chopped cilantro


Instructions

1 00:02:21 - Heat olive oil in a large saucepan over medium high heat. Add in onion and saute 3 minutes, stirring occasionally.

2 00:00:43 - Add in rice and toast 3 minutes, until rice is lightly toasted.

3 00:01:04 - Pour in chicken broth and salt. Bring to a boil over high heat.

4 00:01:31 - Reduce the heat to low and cover with lid. Simmer 15 minutes, until all liquid has been absorbed and rice is tender.

5 00:01:41 - Stir in lime juice, cilantro, and butter until melted. Add more salt, to taste. Serve hot.
