Here's what we added in this video.1 cup freekeh1/2 sweet potato cut into thick slices1 fennel cut into thick slices1 red onion cut into thick slices1 can of organic garbanzo beanshandful of parsley, chopped1/2-1 lemon squeezed1/4 teaspoon cumin1/4 teaspoon smoked paprikafew glugs of good quality extra virgin olive oilcouple glugs of organic seasoned rice vinegars&p to tastein a sauce pot, heat 1 cup freekeh with 2 1/2 cups water. Bring to a boil, cover and simmer for 20 minutesheat oven at 450 F. lay sliced sweet potato, fennel and red onion on a baking sheet, drizzle with olive oil and season with salt and pepper. mix evenly and place in oven for about 20 minutes turning once.the Freekeh should look nice and fluffy so pour it into a big serving bowl to cool.slice veggies into decent bite size pieces and add to freekeh. Add parsley, lemon juice, garbanzo beans, olive oil and rice vinegar.
