How to make The Best Super HEALTHY FREEKEH / Easy Recipe

Freekeh (http://www.freekeh-foods.com) is a young green wheat with many healthy benefits. Very high in fiber. More than four times the fiber content of brown rice. Great for weight loss with high fiber and short transition through the body. Rich in calcium, iron, and zinc. High protein content.

This was a very healthy salad using fresh ingredients. What's great about freekeh, you can treat it like a canvas and add seasonal vegetables. Here's what we added in this video.
1 cup freekeh
1/2 sweet potato cut into thick slices
1 fennel cut into thick slices
1 red onion cut into thick slices
1 can of organic garbanzo beans
handful of parsley, chopped
1/2-1 lemon squeezed
1/4 teaspoon cumin
1/4 teaspoon smoked paprika
few glugs of good quality extra virgin olive oil
couple glugs of organic seasoned rice vinegar
s&p to taste

in a sauce pot, heat 1 cup freekeh with 2 1/2 cups water. Bring to a boil, cover and simmer for 20 minutes

heat oven at 450 F. lay sliced sweet potato, fennel and red onion on a baking sheet, drizzle with olive oil and season with salt and pepper. mix evenly and place in oven for about 20 minutes turning once.

the Freekeh should look nice and fluffy so pour it into a big serving bowl to cool.

slice veggies into decent bite size pieces and add to freekeh. Add parsley, lemon juice, garbanzo beans, olive oil and rice vinegar. Mix and serve!
