Try this easy way to poach fish for a healthy seafood dinner. Poaching is a terrific technique for many types of fish; in this dish I poach cod filets, but you can use this same preparation to poach salmon, tilapia, sole, trout, etc.. I prefer a basic poaching solution of water, wine, and lemon juice, but your poaching liquid can contain as many or few ingredients as you like. Use approximately a 1:2 or 1:3 ratio for the water to wine.
