No egg lover can say no to a plate of garmagaram egg bhurji and pavs. Here's a step to step video on how to make the perfect bhurji in your home kitchen!
EGG BHURJI

Ingredients

8 eggs
2 tbsps oil
2 medium onions, chopped
3-4 green chillies, chopped
2 medium tomatoes, chopped
1½ tsps red chilli powder
1 tsp coriander powder
¼ tsp turmeric powder
½ tsp garam masala powder
Salt to taste
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Toasted pavs to serve

Method

1. Break the eggs in a bowl and whisk for a few seconds.
2. Heat oil in a non-stick pan, add onions and green chillies and sauté for 2 minutes or till the onions turn translucent.
3. Add tomatoes, mix and sauté for 2-3 minutes. Add red chilli powder, coriander powder, turmeric powder and garam masala powder and mix well. Cook for 1 minute.
4. Add salt, mix and cook for 1-2 minutes. Add the eggs mixture and continue to mix and cook for 2-3 minutes more.
5. Add coriander leaves, mix and take the pan off the heat. Transfer into a serving bowl, garnish with coriander sprig.
6. Serve hot with toasted pavs.
