Mini Pizzas

Ingredients:
(Pizza Dough)
• 2 cups Flour
• 1 tsp Yeast
• 1 cup lukewarm Water
• 1tsp Salt
• 1 tsp Sugar
• 2 tbsp extra-virgin Olive oil
• 1 cup small Basil
• 1 cup grated Mozzarella / Cheddar cheese
• Pizza sauce (recipe below)

Method:
1. Place the flour on a work platform make a well add yeast, sugar and lukewarm water, stir the mixture. Keep adding lukewarm water and salt to taste to form a smooth and elastic dough.

2. Knead well in a mixer or with hands for about 5 minutes. If using a mixer, once finished kneading, remove dough from bowl and shape into a large ball by hand.

3. Place the dough in an oiled bowl, cover the bowl with lid and let it rise for an hour or till doubled in size

To assemble pizzas:
1. Preheat oven to 200 degrees.
2. Line a large baking sheet with aluminum foil.
3. Cut the pizza dough into portions. Place one portion of the pizza dough on a well-floured surface, roll it with the help of rolling pin.
4. Cut dough into 18-20 rounds with the help of a round cutter; place rounds 1 inch apart on the baking sheet. Top each with pizza sauce, cheese, and basil.
5. Bake mini pizzas for 12-15 minutes, or until cheese is melted. Serve immediately.

Pizza sauce:
• 1 cup tomato puree
• 1 tsp oregano powder
• 1tsp minced garlic
• 1 tsp paprika
• 1 tbs olive oil

Method: In a medium bowl, Mix tomato puree with oregano, olive oil, garlic, and paprika.
