If you have any other variations, do share in the comments!POHAIngredients2 cups pressed rice (poha)2 tbsps oil ¼ cup raw peanuts1 tsp mustard seeds1 tsp cumin seeds10-15 curry leaves¼ tsp asafoetida (hing)2 medium onions, chopped2-3 green chillies, chopped1 tsp turmeric powder2 medium potatoes, peeled and cut into ½ inch piecesSalt to taste1 tsp sugar2 tbsps chopped fresh coriander leaves½ lemonFresh coriander sprig for garnishLemon wedges for garnish + to serveSev to serveMethod1. Wash poha thoroughly and drain it through a strainer. Set aside for 5-10 minutes for the poha to become soft. 2. Heat oil in a non-stick pan. Add peanuts and fry till they turn golden brown and crisp. Drain on an absorbent paper. 3. Add mustard seeds in the oil remaining in the pan and let the seeds splutter. Add cumin seeds, curry leaves and asafoetida and sauté for a minute.4. Add onions, mix and saute for 2-3 minutes or till the onions turn translucent.5. Add green chillies and mix well. Add turmeric powder, mix and cook for a minute.6. Add potatoes and mix. Add ¼ cup water, mix, cover and cook for 4-5 minutes or till the potatoes turn soft.7. Add salt and sugar and mix well. Add soaked poha and mix till well combined. Sprinkle 2 tbsps water, cover and cook for 1-2 minutes. 8. Add the fried peanuts and coriander leaves and mix well.9. Squeeze the juice of lemon and mix well. Take the pan off the heat.10. Transfer the poha in a serving bowl, garnish with coriander sprig and lemon wedge. Serve hot with sev and lemon wedges.
