Sooji Appam

Ingredients for the outer covering:

Maida - 1 ½ cups

Lemon yellow food colouring - as required

Til oil/sesame oil - few tbsps

Method to make the outer covering:

In a bowl, add the maida and the colour

Make a soft dough adding water

Add few tbsps of oil to the dough and knead again

Finally allow the dough to rest for half an hour in a oil-smeared bowl

Meanwhile, proceed to make  the stuffing


Ingredients for the stuffing;

Sooji/Rawa - 1 cup

Sugar - 2 cups

Cardamom powder - few pinches

Any chopped nuts like almonds or cashew (optional) - 1 tbsp

Ghee - few tsps

Boiling water - 2 ½ cups

Method to make the stuffing:

Take a thick pan and heat few tsps of ghee

Then, quickly roast the chopped nuts and add the cardamom powder too

Now, add the Sooji/Rawa and roast to a light golden colour

Then, add the boiling water to the Sooji/rawa and keep cooking till it all water is absorbed

Now, add the sugar and stir everything together

Keep cooking till all the sugar is absorbed well and the stuffing becomes thick and non-sticky

Allow the stuffing to come to room temperature

Ingredients for deep frying:

Oil - for deep frying


Method to assemble:

When the stuffing come to room temperature, make a gooseberry-size balls out of it

Then, knead the resting dough again and make small gooseberry-size balls out of it

Now, oil you hand and pat out the outer layer ball into a thin disc and stuff with the filling

Close by pulling up all the edges

Meanwhile heat oil in a pan for frying

Now, pat back the stuffed ball into a thin disc and deep-fry till the Sooji Appam is light golden
