Keep aside for a while.Take 1/2 a Kg of Onions, grind it coarsely in a mixie or a chopper and keep aside for a while.Heat a pan to temper the Pickle, add 4 to 5 Tbsp of Oil.Add 2 Tsp of Bengal Gram Dal and Black Gram Dal each saute for a while and add 1 Tsp of Mustard Seeds.Add a Tsp of Cumin Seeds, let splutter and add 2 to 3 Red Chilies.Add coarsely ground Onions, roast until the raw smell is gone.Then, add the ground Powder mixture of Fenugreek, Cumin and Mustard Powder and mix.Add 2 1/2 Tsp of Chili Powder or as needed, Salt to taste, 1/2 a Ts of turmeric Powder.Soak a Lemon sized Tamarind and take the thick pulp and add it to the Onion.Cook it until Oil, separates on low medium flame.Add a Tsp of Jaggery grate and mix to balance the taste.Ready tasty and delightful Onion Pickles can be saved for a Month's time.
