Schezwan Dosa with chow mein noodles is a famous Mumbai street food combining the Indochinese flavours and is loved by one and all. INSTANT NOODLE CHEESE DOSA Ingredients Cheese Sauce 2 tablespoons butter, cut in cubes2 tablespoons refined flour½ cup milk + ¼ cup ½ cup processed cheese, grated Salt to taste1 teaspoon crushed black pepperDosaOil for brushing 2 cups ready dosa batter2 tablespoons butter2 tablespoons schezwan chutney 1 medium onion, finely chopped1 medium tomato, finely chopped1 medium capsicum, finely chopped1 tablespoon coconut chutney2 packets maggi, prepared1 cube cheese Cheese sauce for garnish Chopped coriander leaves for garnishSambhar for servingCoconut chutney for servingMethod1. To make the cheese sauce, heat butter in a non-stick sauce pan till melts. Add refined flour and whisk. 2. Add half milk and whisk again, removing the lumps. Once the mixture is lump free add the remaining milk and whisk. 3. Add cheese and whisk till it melts. Add ¼ cup milk and whisk. 4. Add salt and pepper, whisk well. 5. Brush a non-stick tawa with oil and heat it. Pour the ready dosa batter and cook. Add butter to the dosa and spread.6. Add schezwan chutney and spread. Add onions, tomatoes and capsicum, mash it using a potato masher on the dosa. 7. Add coconut chutney and mash. 8. Add maggi and cheese sauce, spread it on the dosa. Cook for 4-5 minutes. Grate cheese on top. Cut the dosa into strips and roll into cylinders. 9. Transfer to a serving plate, garnish with cheese sauce and chopped coriander leaves. 10.
