Nothing is better than spring rolls except an instant spring roll. You can make it in no time with this recipe.INSTANT NOODLE SPRING ROLLIngredients 2 cups boiled instant noodles4 spring roll sheets1 tbsp oil + for deep-frying1 tbsp chopped garlic½ inch ginger, finely chopped1 medium green capsicum, cut into strips¼ medium cabbage, shredded¼ medium red cabbage, shredded1 medium carrot, cut into juliennesSalt to taste1 tbsp soy sauce½ tbsp red chilli sauceCrushed black peppercorns to taste2 stalks spring onion greens, chopped2 tbsps refined flourMethod1. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger and sauté on low heat for 30 seconds. Add capsicum strips, cabbage, red cabbage and carrot and toss for 30 seconds.2. Add salt, soy sauce and red chilli sauce, toss and cook for 30 seconds. Add noodles, crushed peppercorns and spring onion greens, mix and cook for 1 minute. Transfer on a plate and bring down to room temperature.3. Heat sufficient oil in a pan.4. Halve spring roll sheets.5. Take flour in a bowl. Add some water and mix well to make a thick slurry. 6. Put some noddle mixture on one side of each spring onion sheet, apply some slurry on the edges, fold the 2 opposite sides and roll them, applying some slurry.7. Deep-fry rolls in hot oil till golden and crisp. Drain on absorbent paper. 8.
