Nothing is better than spring rolls except an instant spring roll. You can make it in no time with this recipe.

INSTANT NOODLE SPRING ROLL

Ingredients

2 cups boiled instant noodles
4 spring roll sheets
1 tbsp oil + for deep-frying
1 tbsp chopped garlic
½ inch ginger, finely chopped
1 medium green capsicum, cut into strips
¼ medium cabbage, shredded
¼ medium red cabbage, shredded
1 medium carrot, cut into juliennes
Salt to taste
1 tbsp soy sauce
½ tbsp red chilli sauce
Crushed black peppercorns to taste
2 stalks spring onion greens, chopped
2 tbsps refined flour

Method

1. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger and sauté on low heat for 30 seconds. Add capsicum strips, cabbage, red cabbage and carrot and toss for 30 seconds.
2. Add salt, soy sauce and red chilli sauce, toss and cook for 30 seconds. Add noodles, crushed peppercorns and spring onion greens, mix and cook for 1 minute. Transfer on a plate and bring down to room temperature.
3. Heat sufficient oil in a pan.
4. Halve spring roll sheets.
5. Take flour in a bowl. Add some water and mix well to make a thick slurry.
6. Put some noddle mixture on one side of each spring onion sheet, apply some slurry on the edges, fold the 2 opposite sides and roll them, applying some slurry.
7. Deep-fry rolls in hot oil till golden and crisp. Drain on absorbent paper.
8. Serve hot with your choice of sauce.
