2 TYPES INSTANT NOODLES
Preparation time 10 minutes
Cooking time 10 minutes
Serve 2

Ingredients
For Masala Noodles
1 tbsp Oil,
1 large Onion, chopped,
tsp Degi red chili powder,
1 tsp Coriander powder,
tsp Turmeric powder,
1 large Tomato, chopped,
Salt to taste,
cup Green peas,
cup Sweet corn kernels, optional,
2 cups Water,
2 pkt Instant noodles,
1 tbsp Instant noodle masala,
2 no. Green chillies (less spicy & chopped)
inch Ginger (peeled & finely chopped)
1 tbsp Butter, cubed,
1 tbsp Coriander leaves, finely chopped,

For Chinese Noodles
1 tbsp Oil,
2-3 no. Garlic cloves, sliced,
Onion, sliced,
1 medium Carrot, julienned,
1 large Capsicum, julienned,
2-3 heaped tbsp Schezwan sauce,
3 pkt Instant noodles,
1 tsp Light soy sauce,
3 cups Water,
2 tsp Instant noodle masala,
Salt to taste,
1 tsp Light soy sauce,
tbsp Green chili sauce,
1 heaped tbsp Tomato ketchup,
2-3 tbsp Spring onion, roughly chopped,
1 tsp Sesame oil (optional)

For Garnish
Coriander sprig,
Spring onion,

Process
For Masala Noodles
In a kadai or sauce pot, add oil, once it's hot, add onion and saute it well until translucent.
Add degi red chili powder, coriander powder, turmeric powder and saute it for a minute.
Add tomato, salt to taste and cook it well, add green peas, sweet corn kernels, water and let it cook for 7-8 minutes on medium flame.
Add instant noodles, cover it with the lid and cook it for 3-4 minutes.
Add instant noodle masala, green chillies, ginger and mix all well.
Finish it with some butter and coriander leaves.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot.

For Chinese Noodles
In a wok or sauce pot, add oil, once it's hot, add garlic and saute it for a minute.
Add onion, carrot, capsicum, schezwan sauce and cook it on high flame.
Add instant noodles, light soy sauce, water, cover it with a lid and cook it for 3-4 minutes on medium flame.
Add instant noodle masala, salt to taste, light soy sauce, green chili sauce, tomato ketchup, spring onion and let it cook for 2-3 minutes.
Finish it with some sesame oil and mix it well.
Transfer it to a serving bowl and garnish it with spring onion.
Serve hot.
