‘Baked Beans’ In an Instant Pot or a Pressure Cooker!This recipe gives you all of the flavour of a slow cooked traditional Baked beans recipe - without the long baking time! Packed with bacon, molasses, mustard and coffee - this baked beans recipe is a winner!Ingredients:4 slices bacon, finely chopped1 small onion, minced3 cloves garlic, crushed450g dried small white beans, rinsed1⁄2 cup (110g) packed dark brown sugar 1⁄2 cup (125 mL) strong black coffee1⁄2 tsp (2 mL) hot sauce1½ tsp (7 mL) coarse salt1⁄2 tsp (2 mL) chilli powder (optional) 1 Tbsp (15 mL) mustard powder1 Tbsp (15 mL) molasses1 cup (250 mL) tomato passata4 cups (1L) chicken stock 2 Tbsp (30 mL) cider vinegar Method:Select sauté, hi heat, and preheat the cooking bowl. Add the bacon and cook until beginning to crisp, about 3 minutes. Stir in the onion and cook until softened, 3 more minutes. Stir in the garlic and cook for 30 seconds. Stir in remaining ingredients, except for vinegar. Select pressure cook. Adjust cooking time to 25 minutes. When cooking has completed, release pressure, open the lid and select reduce and desired heat level.
