INSTANT VEGETABLE DOSA

Ingredients

1 cup oats
½ cup semolina (sooji/rawa)
2 small onions, roughly chopped
2 small tomatoes, roughly chopped
1 medium carrot, roughly chopped
2-3 green chillies, broken
1 tsp cumin seeds
¾ cup yogurt
Salt to taste
¼ tsp turmeric powder
Oil for drizzling
White butter as required
Chopped fresh coriander leaves for sprinkling
Coconut chutney to serve

Method

1. Put oats in a mixer jar, add semolina, onions, tomatoes, carrot, green chillies, cumin seeds, yogurt, ¼ cup water, salt and turmeric powder and grind to a fine paste. Add ½ cup water and mix well to make batter.
2. Transfer the batter into a bowl, adjust salt and mix well.
3. Heat a non-stick tawa. Drizzle a little oil and pour a ladleful of the batter and lightly spread it. Add white butter and sprinkle coriander leaves and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes as well. Fold the dosa and serve hot with coconut chutney.
