INSTANT WHEAT VERMICELLI UPMA - (Serves - 4)

Ingredients

200 grams whole wheat vermicelli, roughly broken
1 tablespoon oil
1 teaspoon split skinless black gram (dhuli urad dal)
1 teaspoon mustard seeds
1 green chilli, finely chopped
5-6 curry leaves
1 tablespoon peanuts
1 medium tomato, finely chopped
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
Salt to taste
2 teaspoons lemon juice
1 tablespoon chopped fresh coriander leaves + for garnishing

Method

1. Heat oil in a non-stick pan. Add split black gram and sauté till it turns golden brown.
2. Add mustard seeds and let it splutter. Add green chilli and curry leaves and let the curry leaves crackle. Add peanuts and sauté for 30 seconds.
3. Add tomato and sauté till soft. Add 1 cup water, turmeric powder, chilli powder and salt, mix and cook till the mixture boils.
4. Add wheat vermicelli, mix, cover and cook for 2 minutes or till done.
5. Add lemon juice and 1 tablespoon coriander leaves and mix well.
6. Serve hot garnished with coriander leaves.
