Jaljeera | Sanjeev Kapoor Khazana

JALJEERA

Ingredients

4 tablespoons cumin seeds (jeera)
Salt to taste
¼ teaspoon asafoetida (hing)
Black salt to taste
3 tablespoons castor sugar
1 teaspoon finely chopped ginger
12-16 fresh mint leaves
Few fresh coriander sprigs
1 tablespoon tamarind pulp
Juice of 2 lemons
1 lemon, sliced
Ice cubes as required
Drinking soda for topping

Method

1. Dry roast cumin seeds till fragrant and crush coarsely in a mortar with a pestle.
2. Add salt, asafoetida, black salt and sugar and crush. Add ginger, mint leaves, coriander leaves and tamarind pulp and crush again.
3. Halve lemons.
4. Put some cumin mixture into individual tall glasses. Squeeze in juice from lemon halves, add 2-3 lemon slices and some ice cubes.
5. Top with drinking soda, stir and serve immediately.
