You can carve this using different vegetables too like: gherkins, eggplant, dehydrated carrot..ect. The one important thing you will need to make this is a very sharp thin knife like the Miyabi knife used in the video. How to carve the cucumber in to beautiful sushi garnish?The technique is very simple, you cut a very small "V" shape in to the cucumber. Then you push that piece up a little, after pushing it up you cut another "V" shape underneath the original "V" shape and push that up. Repeat the process until the cucumber leaf design is big enough.
