Jhuri Aloo Bhaja | Sanjeev Kapoor Khazana

The classic Aloo Bhaja to accompany your Alu'r Dom and luchii.

JHURI ALOO BHAJA

Ingredients

8 medium potatoes, peeled
Oil for deep frying
7-8 tbsps peanuts
2-3 sprigs of curry leaves
Salt to taste
Crushed black peppercorns to taste
½ tsp chaat masala

Method

1. Take a bowl with water, grate potatoes and wash the grated potatoes well. Squeeze the grated potatoes and spread on a kitchen towel.
2. Heat sufficient oil in a non-stick pan, deep fry the potatoes till golden and crisp on low heat. Drain on absorbent paper.
3. In the same hot oil, deep fry peanuts and drain on absorbent paper. Deep fry the curry leaves and drain on absorbent paper.
4. In a bowl, Add the fried potatoes, peanuts and curry leaves, salt, crushed black peppercorns and a pinch of chaat masala, mix well. Serve immediately.
