Dosas cooked in butter are topped with a succulent and spicy mixture of veggies, which is also cooked in butter! This is then garnished with loads of cheese and cooked for a few more minutes till the cheese melts and appetizingly coats the veggie topping. Slice it with a pizza cutter and share it with your friends – we assure you, it will make your day. While the Jini Dosa is self-sufficiently tasty, you can also enjoy it with chutney and sambhar.Preparation Time: 20 minutes.Cooking Time: 22 minutes.Makes 4 dosas. 2 cups dosa batter4 tbsp butter4 tbsp finely chopped onions2 tbsp finely chopped cabbage2 tbsp finely chopped capsicum4 tbsp finely chopped tomatoes4 tsp chilli-garlic paste1 tsp chilli powder1 tsp pav bhaji masala Salt to taste4 tbsp finely chopped coriander (dhania)8 tbsp grated processed cheeseFor the garnish4 tbsp grated processed cheese2 tsp finely chopped coriander For servingCoconut chutneySambhar1. Heat a non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth or a tissue paper.2. Pour a big ladleful of the batter on the tava (griddle) and spread in a circular motion to make a 200 mm. (8”) diameter circle.3. Spread ½ tbsp of butter evenly over it and cook on a medium flame for 2 minutes.4. Add 1 tbsp of onions, ½ tbsp capsicum, ½ tbsp cabbage, 1 tbsp tomatoes, 1 tsp red chilli paste, 1 tbsp tomato ketchup, ¼ tsp chilli powder, ¼ tsp pav bhaji masala, 1 tbps coriander, salt and ½ tbsp butter. 5. Mix it well lightly using a flat ladle and cook on a medium flame for 1 to 2 minutes. 6. Cut into 4 equal strips vertically using a pizza cutter. 7. Sprinkle 2 tbsp of cheese evenly over it and cook for 1 minute. 8. Roll each strip tightly and palce in a serving plate.9. Garnish with cheese and coriander. 10. Repeat steps 1 to 9 to make 3 more dosas.11. Serve immediately with coconut chutney and sambhar.
