An exclusive recipe with chickpeas and chicken- Kabuli chicken is a perfect main course option and tastes best when served with paranthas, rotis or naan!KABULI CHICKENIngredients1½ cups Tata Sampann Kabuli Chana750 grams chicken, cut into 2 inch piecesSalt to taste2 tbsps ginger-garlic paste1½ tsps green chilli paste¼ cup yogurt2½ tsps red chilli powder¾ tsp turmeric powder4 tbsps ghee1 tsp cumin seeds3-4 green cardamoms3-5 cloves3-5 black peppercorns1 inch cinnamon stick1 bay leaf3 large onion, finely chopped1 large tomatoes, finely chopped¾ cup tomato puree1½ tsps coriander powder1½ tbsps chole masala3 green chillies + for garnishTomato wedges for garnishLemon wedge for garnishCoriander sprig for garnishMethod1. In a large bowl, add Tata Sampann Kabuli Chana and sufficient water. Soak it for 7-8 hours. Drain and transfer into another bowl.2. Take chicken in a large bowl, add salt, ginger-garlic paste, ½ tsp green chilli paste, yogurt, 1½ tsps red chilli powder, ¼ tsp turmeric powder and mix well. Set aside to marinate for 10-15 minutes.3. Heat ghee in a non-stick pressure cooker, add ghee, cumin seeds, green cardamoms, cloves, black peppercorns, cinnamon stick and bay leaf. Sauté till fragrant. 4. Add onions and mix well. Sauté till golden brown in colour.5. Add remaining ginger-garlic paste, remaining green chilli paste and sauté for 1-2 minutes.6. Add tomato and tomato puree and mix well. Cook till the oil separates.7. Add remaining red chilli powder, remaining turmeric powder, coriander powder, chole masala and sauté on low heat. Add ½ cup water and mix well. Cook for 1-2 minutes.8. Add the soaked chana and mix well. Slit green chillies and add to the cooker. Mix well and add 6 cups water. Mix well.9. Add salt and mix well. Pressure cook till 7-8 whistles are released. Allow the pressure to settle completely.10. Heat remaining ghee in another pan, add the chicken into it and mix well. Sauté on high heat for 4-5 minutes.11. Add the cooked chole in it and mix well. Cover and cook till chicken is cooked completely. Take it off the heat.12. Transfer into a serving bowl, garnish with tomato wedges, lemon wedges, green chilli, and coriander sprig.
