KABULI CHICKEN

Ingredients

1½ cups Tata Sampann Kabuli Chana
750 grams chicken, cut into 2 inch pieces
Salt to taste
2 tbsps ginger-garlic paste
1½ tsps green chilli paste
¼ cup yogurt
2½ tsps red chilli powder
¾ tsp turmeric powder
4 tbsps ghee
1 tsp cumin seeds
3-4 green cardamoms
3-5 cloves
3-5 black peppercorns
1 inch cinnamon stick
1 bay leaf
3 large onion, finely chopped
1 large tomatoes, finely chopped
¾ cup tomato puree
1½ tsps coriander powder
1½ tbsps chole masala
3 green chillies + for garnish
Tomato wedges for garnish
Lemon wedge for garnish
Coriander sprig for garnish

Method

1. In a large bowl, add Tata Sampann Kabuli Chana and sufficient water. Soak it for 7-8 hours. Drain and transfer into another bowl.
2. Take chicken in a large bowl, add salt, ginger-garlic paste, ½ tsp green chilli paste, yogurt, 1½ tsps red chilli powder, ¼ tsp turmeric powder and mix well. Set aside to marinate for 10-15 minutes.
3. Heat ghee in a non-stick pressure cooker, add ghee, cumin seeds, green cardamoms, cloves, black peppercorns, cinnamon stick and bay leaf. Sauté till fragrant.
4. Add onions and mix well. Sauté till golden brown in colour.
5. Add remaining ginger-garlic paste, remaining green chilli paste and sauté for 1-2 minutes.
6. Add tomato and tomato puree and mix well. Cook till the oil separates.
7. Add remaining red chilli powder, remaining turmeric powder, coriander powder, chole masala and sauté on low heat. Add ½ cup water and mix well. Cook for 1-2 minutes.
8. Add the soaked chana and mix well. Slit green chillies and add to the cooker. Mix well and add 6 cups water. Mix well.
9. Add salt and mix well. Pressure cook till 7-8 whistles are released. Allow the pressure to settle completely.
10. Heat remaining ghee in another pan, add the chicken into it and mix well. Sauté on high heat for 4-5 minutes.
11. Add the cooked chole in it and mix well. Cover and cook till chicken is cooked completely. Take it off the heat.
12. Transfer into a serving bowl, garnish with tomato wedges, lemon wedges, green chilli, and coriander sprig. Serve hot.
