KADAI CHICKENIngredients750 grams chicken, cut into 2 inch pieces on the bone4 medium tomatoes15-20 garlic cloves1 inch ginger4-5 tbsps oil3-4 cloves2 bay leaves1 inch cinnamon1 tsp cumin seeds2-3 green chillies, chopped¼ tsp green cardamom powderCrushed black peppercorns to taste¾ cup yogurtSalt to taste1½ tsps red chilli powder¼ tsp turmeric powder1 tsp garam masala powder1 tsp coriander powder¼ cup chopped fresh corianderGinger strips for garnishParanthas for servingMethod1. Halve the tomatoes. Crush garlic cloves coarsely. Add ginger and crush coarsely.2. Heat oil in non-stick pan, add cloves, bay leaves, cinnamon stick ,cumin seeds, green chillies and sauté for a minute.3. Add chicken and mix well. Add green cardamom powder, crushed peppercorns and mix well. Sear on high heat for 4-5 minutes.4. Add ½ cup water and mix well. Place halved tomatoes on top, cover and cook for 6-8 minutes or till tomatoes are pulpy.5. Remove the skin of the tomatoes and mash them. Add crushed garlic-ginger and sauté for a minute.6. Add yogurt, salt, red chilli powder, turmeric powder, garam masala powder and coriander powder and mix well. Cover and cook for 2-3 minutes.7. Add coriander and mix well.
