Kadai Prawns | Sanjeev Kapoor Khazana

KADAI PRAWNS

Ingredients

20-25 medium prawns, peeled and deveined
2 tbsps kadai masala
2 tbsps oil
2 medium onions, chopped
1 tbsp ginger-garlic paste
1 large tomato, chopped
½ cup tomato puree
Salt to taste
½ tsp turmeric powder
1 tbsp coriander powder
½ tbsp red chilli powder
1½ tbsps cashew nut-melon seeds (kaju-magaz) paste
½ tsp dried fenugreek leaves (kasuri methi) powder
½ medium green capsicum, chopped
½ medium onion, diced and layers separated
1 medium tomato, diced
Coriander leaves for garnish

Method

1. Heat oil in a non-stick kadai. Add onions and sauté till golden brown.
2. Add ginger-garlic paste and sauté. Add chopped tomatoes, cook till pulpy. Add tomato puree, mix well and cook till oil is separated.
3. Add turmeric powder, cumin powder, red chilli powder and mix well. Add 1 cup water and stir well.
4. Add cashew nut-melon seed paste, mix well and cook for a few seconds. Add prawns, mix well and cook for 2 minutes.
5. Add dried fenugreek leaves powder and mix well. Add capsicum, onions, tomatoes, and mix well. Add kadai masala, mix well and cook for 1-2 minutes.
6. Garnish with coriander leaves and serve hot.
