A straightforward and simple sabzi recipe of red pumpkin and potatoes flavored with spices that are easily available at home. KADDU AUR ALOO KI SABZIIngredients250 grams red pumpkin (kaddu), peeled, deseeded and cut into 1 cm pieces250 grams potatoes, peeled and cut into 1 cm cubes2 tbsps oil1 tsp cumin seeds¾ tsp red chilli powder½ tsp dried mango powder (amchur)½ tsp turmeric powder½ tsp garam masala powderSalt to taste3 tbsps freshly chopped coriander leavesOnion rings to serveGreen chillies to serveLemon wedges to serveCoriander sprig for garnishMethod1. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add the pumpkin and sauté for 1 minute.2. Add the potatoes and sauté well. Add red chilli powder, amchur, turmeric powder, garam masala powder, salt to taste and sauté for 1 minute.3. Add chopped coriander and add 2 cups water, mix well. Cover and cook till the potatoes are cooked.4.
