KADDU PURIIngredients200 grams red pumpkin, peeled, cut into 1 inch cubes and boiled1½ cups whole wheat flour ½ tsp red chilli powder½ tsp cumin powder1 tsp coriander powder¼ tsp turmeric powderSalt to taste2 tbsps chopped fresh coriander leaves2 tbsps semolina (rawa)1 tsp oil + for greasing + for deep fryingPotato curry to serveMethod1. In a parat, add the boiled pumpkin and mash using a fork. Add red chilli powder, cumin powder, coriander powder, turmeric powder and salt. Add chopped coriander, semolina and flour and mix well. Knead to a stiff dough.2. Add 1 tsp oil and mix well. Set aside for 10-15 minutes.3. Grease the worktop with a little oil, take a portion of the dough and shape it into a ball. Flatten it and roll into a small disc. 4. Heat sufficient oil in a kadai, deep fry the prepared discs till golden and puffed up. Drain on an absorbent paper.5.
