This recipe is a combination of two of the most comforting Indian dishes that is ‘Kadhi & Khichdi’. When this is mixed together, it gives you an amazing dish that is definitely going to win everyone’s hearts!KADHI KHICHDIIngredients1½ cups yogurt3 tbsps gram flour (besan)2 cups cooked basmati rice¼ tsp turmeric powder¾ tsp red chilli powderSalt to taste1 tsp ghee1 tsp cumin seeds¼ tsp fenugreek seeds (methi dana)1 inch ginger, finely choppedA pinch of asafoetida (hing)1 medium onion, sliced1 dried red chilli2 tbsps chopped fresh coriander leaves + for garnishPapads to serveMethod1. Take yogurt, gram flour, turmeric powder, red chilli powder and salt and 1 cup water whisk till smooth. 2. Heat ghee in a non-stick pan, add cumin seeds and fenugreek seeds and sauté till they change colour. Add ginger and sauté well. Add asafoetida and onion and sauté till translucent and mix well. 3. Add dried red chilli and mix well. Add the prepared yogurt mixture and mix well. Cook for 2-3 minutes.4. Add rice and mix well. Cook for 1-2 minutes. Sprinkle chopped coriander and take the pan off the heat.5.
