Kafta Lebanese Style Kebab Chicken Kebab Sanjeev Kapoor Khazana

Lebanese cuisine ka hero- Kafta, this time made using chicken, and served hot with dip, pita bread and salad - makes for a perfect side dish for any day!

KAFTA

Ingredients

300 grams chicken mince
2 small white onions, cut into quarters
2-3 light green chillies, broken
1 tsp dried red chilli flakes
1 tsp all spice powder
1 tsp smoked paprika
1 tsp crushed black peppercorns
2 tsps lemon juice
cup fresh coriander leaves
Salt to taste
cup fresh breadcrumbs
2-3 tbsps oil
Lettuce leaves to serve
Grilled tomato halves to serve
Dip
1 cup thick yogurt
1 tsp sumac powder
tsp smoked paprika
1 tsp garlic paste
2 tbsps extra virgin olive oil
Salt to taste

Method

1. Put the white onions in a food processor jar. Add the green chillies, dried red chilli flakes, all spice powder, smoked paprika, crushed black peppercorns, lemon juice, coriander leaves and process to a coarse paste. Add the chicken mince and salt and continue to process till smooth paste is formed.
2. Add fresh breadcrumbs and mix well.
3. Dip your fingers with some water and take some portions of the mixture and shape it into a ball. Flatten it slightly to shape it like a kebab.
4. Heat oil in a non-stick grill pan. Place the kebabs on it and grill on high heat for 2-3 minutes, flip and grill the other side for 2-3 minutes as well.
5. Transfer on a serving plate.
6. To make the dip, take yogurt in a bowl. Add sumac powder, smoked paprika, garlic paste, extra virgin olive oil, salt and mix well.
7. Arrange the kebabs on a serving plate, serve hot with prepared dip, lettuce leaves, white onion quarters and grilled tomato halves.
