KALE CHAAT

Ingredients

8-10 kale leaves, torn in half
Batter
1½ cups gram flour (besan)
¼ tsp carom seeds (ajwain)
¼ tsp asafoetida (hing)
½ tsp Tata Sampann Chilli Powder
¼ tsp turmeric powder
Salt to taste
Oil for deep frying
Chaat
1 medium onion, finely chopped
1 medium tomato, finely chopped
½ small raw mango, finely chopped
Sweetened yogurt for drizzling
Date and tamarind chutney for drizzling
Green chutney for drizzling
Chaat masala for sprinkling
Black salt for sprinkling
Roasted cumin powder for sprinkling
Chopped fresh coriander leaves for garnish
Sev for garnish
Roasted peanuts for garnish
Fresh pomegranate pearls for garnish

Method

1. Take gram flour in a large bowl, add carom seeds, asafoetida, Tata Sampann Chilli Powder, turmeric powder, salt and 1 cup water little by little, whisking continuously till a smooth batter of coating consistency is formed.
2. Heat oil in a non-stick pan.
3. Coat each kale leaf into the batter and gently slide into the hot oil and deep fry till golden brown and crisp.
4. Arrange the fried kale leaves into a serving bowl, sprinkle onion, tomato, and raw mango. Drizzle sweetened yogurt, date and tamarind chutney and green chutney. Sprinkle chaat masala, black salt and roasted cumin powder. Garnish with coriander leaves, sev, roasted peanuts and pomegranate pearls.
