Yummy pakoras made using purple yams.KAND KE PAKODEIngredients250 grams purple yam (kand), peeled1½ cups gram flour (besan)1 tbsp rice flourA pinch of asafoetida½ tsp red chilli powder½ tsp crushed black peppercorns2 tsps coriander powder¼ tsp turmeric powder½ tsp roasted cumin powderSalt to taste2 tsps lemon juiceA pinch of baking sodaOil for deep fryingChaat masala for sprinklingTomato ketchup to serveMethod1. In a bowl, add gram flour, rice flour, asafoetida,red chilli powder,crushed black peppercorns, coriander powder, turmeric powder, cumin powder, salt, lemon juice and sufficient water, mix well to make a semi-thick batter.2. Add baking soda and mix well. Cut thin slices of purple yam and set aside.3. Heat sufficient oil in a non-stick pan, dip each slice of purple yamdrop in the hot oil.4. Deep fry till golden brown and crisp. Drain on an absorbent paper.5.
