How To Marinate Mutton -
- 1/2 kg Mutton
- 3 tbsp Hung Curd
- 1 tsp Ginger & Garlic Paste
- 1 tsp Mix Masala
- 1/2 tsp Garam Masala
- 1 tsp Red Chilli Powder
- Coriander Leaves
- Salt (as per taste)

- 3 tbsp Oil
- 1 Bay Leaf
- 1/2 inch Cinnamon Stick
- 2 Cloves
- 4-5 Black Peppercorns
- Coriander Leaves
- 1 tsp Ginger & Garlic Paste
- 3 Onions (finely chopped)
- Salt (as per taste)
- 1/2 tsp Mix Masala
- 1/2 tsp Garam
- 1/2 tsp Red Chilli Powder
- Water (as required)
- 1 cup Water

Mutton curry (also referred to as kosha mangsho, lamb curry, or goat curry) is a dish that is prepared from Goat Meat (or sometimes Lamb meat ) and vegetables. The dish is found in different variations across all states, countries and regions of South Asia.
Goat meat or goat's meat is the meat of the domestic goat (Capra aegagrus hircus). The common name for goat meat is simply "goat", though meat from adult goats is referred to as chevon, while that from young goats can be called capretto (It.), cabrito (Sp.) or kid. In South Asian and Caribbean cuisine, mutton commonly means goat meat. In South Asia, where mutton curry is popular, "mutton" is used for both goat and lamb meat.
Mutton curry was originally prepared putting all the ingredients together in a earthen pot and slow cooking the whole curry by wood fire on a clay oven. Today it is cooked using pressure cookers and slow cookers after briefly sautéing all the ingredients and spices in a big wok. The slow cooked mutton becomes more tender than normally cooked mutton. Mutton curry is generally served with rice or with Indian breads, such as naan or parotta. The dish can also be served with raji, a cereal.
On the Indian subcontinent, the rice dish mutton biryani and the mutton curries prepared in parts of Uttar Pradesh, Hyderabad and Bihar, use goat meat / khashi (castrated male goat) meat as a primary ingredient to produce a rich taste. Curry goat is a common traditional Indo-Caribbean dish. In Bangladesh, traditional meat dishes like kosha mangsho and rezala are prepared using meat from a khashi, a castrated goat with a meat that has richer taste and a milder, less gamey flavour.
