Kangan Gujiya Diwali Special Recipe Chef Harpal Singh

Baki Gujiya Ek Taraf,
Aaur Kangan Gujiya Ek Taraf....!
Here's my Diwali special recipe for you guys.

Ingredients Quantity
For Filling
Ghee 1 tbsp
Almonds chopped 1tbsp
Cashew nuts chopped 1 tbsp
Pistachios chopped 1 tbsp
Chironji 1 tbsp
Cardamom powder 1 tsp
Semolina 2 tbsp
Desiccated coconut 1 cup
Jaggery cup
Khoya 3 Tbsp
For Dough
Refined flour 3 cups
Ghee cup
Beetroot puree 3 tbsp
Water as required.
Oil for deep frying
Powder sugar for frosting.

Method:-
For Filling.
1. Heat up a kadai add ghee, almonds, cashew nuts and pistachios chopped, add chironji and cardamom powder mix well and saute for a while.
2. Then add semolina, dry coconut and saut for 1-2 mins.
3. Now add jaggery and mix it well.
4. Transfer the mixture in a mixing bowl and mix it well.
5. After the filling gets cool now add Khoya and mix well.
For Dough.
6. In a mixing bowl add refined flour, ghee mix it well.
7. Combine the flour and ghee well.
8. Then divide the flour into two parts.
For Beetroot Dough.
9. In a mixing bowl add half of the combine flour and beetroot puree mix it.
10. Now add water and make dough.
11. Remove in a plate and keep it aside.
For Normal Dough.
12. In a mixing bowl add rest of the combine flour and water and make a dough.
For Making Kangan Gujiya.
13. Take a beetroot dough and roll it out into a thick rectangle sheet.
14. Now cut the edges.
15. Apply water on the sheet edges and place the filling over it.
16. Then tight roll the sheet.
17. Now take a second part of dough and roll it out into rectangle shape, and cut the edges.
18. Then cut the dough into strips and apply water.
19. Then put the filling dough on top of the normal dough and roll it.
20. Make a round kangan and pinch it.
21. Heat up oil in a kadai and deep fry the kangan gujiyas till crisp and light golden brown.
22. Then remove in a plate with absorbent paper.
23. Remove in a serving plate and sprinkle powder sugar.
