KANTOLE KI SABZI

Ingredients

300 grams spiny gourd (kantole)
2 medium onions
1 inch ginger
1 medium tomato
1 green chilli
Salt to taste
1 tbsp oil
1 tsp cumin seeds
1 tbsp garlic chopped
2 tsps coriander powder
1 tsp cumin powder
1 tsp red chilli powder
¼ tsp turmeric powder

Method

1. Deseed the kantole, thinly slice them and transfer into a bowl. Slice onions, chop ginger, slice tomatoes and chop green chilli.
2. Add salt to the kantole and set aside for 2 minutes.
3. Heat oil in a kadai. Add cumin seeds and once they change colour, add garlic, green chilli and ginger and sauté for 1-2 minutes.
4. Add onions and salt and sauté till golden brown in colour. Add tomatoes and cook till pulpy.
5. Add coriander powder, cumin powder, red chilli powder, turmeric powder and ¼ cup water, mix and cook for a minute.
6. Drain and add kantole, mix and cook for 8-10 minutes.
7. Serve hot.
