It's bound to be a family favourite!KANTOLE KI SABZIIngredients300 grams spiny gourd (kantole) 2 medium onions1 inch ginger1 medium tomato1 green chilliSalt to taste1 tbsp oil1 tsp cumin seeds1 tbsp garlic chopped2 tsps coriander powder1 tsp cumin powder1 tsp red chilli powder¼ tsp turmeric powderMethod 1. Deseed the kantole, thinly slice them and transfer into a bowl. Slice onions, chop ginger, slice tomatoes and chop green chilli.2. Add salt to the kantole and set aside for 2 minutes.3. Heat oil in a kadai. Add cumin seeds and once they change colour, add garlic, green chilli and ginger and sauté for 1-2 minutes.4. Add onions and salt and sauté till golden brown in colour. Add tomatoes and cook till pulpy.5. Add coriander powder, cumin powder, red chilli powder, turmeric powder and ¼ cup water, mix and cook for a minute.6. Drain and add kantole, mix and cook for 8-10 minutes.7.
