If you love Karela, then you're definitely going to love this recipe.KARELA FRYIngredients500g karela, deseeded and slicedSalt to taste1½ tbsps oil7-8 curry leaves2 medium onion, chopped½ tsp turmeric powder1 tbsp fennel seeds½ tsp carom seeds (ajwain)1½ tsps cumin powder2 tsps red chilli powder1½ tsps dry mango powder (amchur)¼ cup scraped coconutChopped coriander for garnishingMethod1. In a bowl, add karela, turmeric, salt and mix well. Set aside for 15-20 minutes.2. Heat a non-stick pan, dry roast the fennel seeds till nice and golden. Coarsely grind in a mortar pestle. Add cumin powder, red chilli powder, dry mango powder (amchur), carom seeds (ajwain). Mix well.3. Strain the karela, Add the prepared dry masala to it and mix well.4. Heat oil in a non-stick pan, add curry leaves, onion, and cook till translucent. Add the prepared mix of karela, to the pan, sauté well. Cover and cook till done.5. Add the scrapped coconut, gently mix and garnish with coriander.
