Curry Leaves Chutney a yummy and healthy recipe, which goes well with Idly, Dosa, Roti and Rice too. Healthy as its high in antioxidants, minerals and vitamins. So intake of curry leaves in any form helps us to boost out immunity power. So will try this yummy and healthy chutney.Ingredients: • Curry Leaves : 2 Cups • Bengal Gram Dal : 2 Tablespoons • Black Gram Dal : 2 Tablespoons • Coriander Seeds : 2 Tablespoons • Red Chilies : 10 to 12 No’s • Cumin Seeds : 1 Teaspoon • Garlic : 7 to 8 Pods • Salt : 1 Teaspoon or as needed • Jaggery : 1 Teaspoon Grated • Tamarind pulp : 2 Teaspoons • Oil : 2 TeaspoonsPreparation : • In a pan heat 1 tsp of oil and roast 2 tbsps Bengal Gram Dal.• Add 2 tbsps Black Gram Dal and 2 tbsps Coriander Seeds and fry roast them.• Roast them till they change colour & place them in a separate bowl for a while.• In the same pan roast 10 to 12 red chilies and place them aside.• Add 1 more tsp of oil and fry washed and dried curry leaves till colour changes & let it cool for a while.• In a mixie jar add 2roasted 2 tbsps Bengal gram dal, black gram dal & coriander seeds of each.• Add 1 tsp cumin seeds, 7 to 8 garlic pods & roasted red chilies & grind them in to a fine powder, along with 1 tsp salt or as needed.• Add 1 tsp grated jaggery roasted curry leaves & 2 tsps tamarind pulp.• Grind it into a fine paste.• We don’t have to season or temper it as we have fry roasted all the ingredients.• Our tasty, yummy and healthy chutney is ready.• Goes well with idly, dosa, rice and roti too.
