A chutney prepared with urad dal that can be served as a perfect accompaniment with any meal.KARUPPU ULUNDU CHUTNEY ( Black Urad Chutney)Ingredients¾ cup split black gram with skin (chilkewali urad dal)8-10 dried red chillies, stemmed½ inch ginger, roughly chopped½ cup scraped fresh coconut3 sprigs of curry leavesSalt to taste2 tbsps oil1 tsp split skinless black gram (dhuli urad dal)1 tsp mustard seeds4-5 button dried red chilliesMethod1. Heat a pan. Add urad dal, dried red chillies and sauté till the dal turns golden brown. Transfer in a bowl and set aside. Allow to cool slightly.2. Add ginger to the blender jar. Add coconut, roasted mixture, 1 sprig of curry leaves, salt and 1½ cups water and grind to fine paste.3. For the tempering, heat oil in a small nonstick pan. Add urad dal and once it starts to turn golden brown, add mustard seeds, dried red chillies.4. Once the mustard seeds start to splutter, add remaining curry leaves and mix well.5. Add this tempering to the prepared chutney and mix well.6.
