KATHAL / JACKFRUIT BIRYANI - This is the right season for a Biryani with the king of summer, na not Mango, but Jackfruit :)

KATHAL/JACKFRUIT BIRYANI
Preparation time 10-15 minutes
Cooking time 30-35 minutes
Serve 2-4

Ingredients
For Kathal Marination
1 kg Jackfruit (peeled, cut into dice)
cup fresh Mint leaves, roughly torn,
3-4 tbsp Fried onion,
1 tsp Caraway seeds,
few Coriander leaves, roughly torn,
Salt to taste,
1 tsp Degi red chili powder,
tsp Turmeric powder,
tsp Coriander powder,
cup Fried onion oil,
2 cups Curd, beaten,
1 tbsp Prepared Biryani Masala,
2-3 tbsp Ginger Garlic paste,

For Biryani Masala
10-12 no. Green cardamom,
2 no. Mace,
4-5 no. Cloves,
1 heaped tbsp Black peppercorns,
1 no. Black cardamom,
Salt to taste,
1 inch Cinnamon stick,
3-4 no. Bay leaf,

For Cooking Kathal
cup Oil,
1 Bay leaf,
2 medium Onions, sliced,
Marinated kathal,
1 no. Green chili (less spicy & broken into half)
cup Warm water,

For Cooking Rice
Water as required,

1 no. Bay leaf,
tsp Prepared Biryani Masala
Salt to taste
2 tsp Ghee,
3 cups Sella basmati rice (soaked for 30 minutes)

For Jhol
cup Remaining excess oil,
tsp Prepared Biryani Masala,
1 tsp Caraway seeds,
2 heaped tbsp Fresh cream,

For Assembling
Cooked kathal,
1st batch of Cooked rice,
Remaining Cooked kathal,
1 tbsp Coriander leaves, roughly torn,
1 tbsp Mint leaves, roughly torn,
3-4 Green chili (less spicy & broken into half)
tsp Prepared Biryani Masala,
2nd batch of Cooked rice,
Prepared jhol,
few Fried onions,
few Coriander leaves, roughly torn,
tsp Kewra water,
1 tbsp Ghee, for finishing,

For Raita
2-3 tsp Fried onion, chopped,
1 no. Green chili (less spicy & chopped)
few Mint leaves, chopped,
1 cup Curd, beaten,
tsp Degi red chili powder,
Salt to taste,
tsp Black peppercorns, crushed,
few Fried onions,

For Garnish
Coriander sprig,
Mint sprig,
