Kerala Olan Recipe | How to make Kerela Style Olan | Onam Special Recipe by Preetha Srinivasan | India Food Network

Preetha is all set to celebrate Onam and the abundance it brings. Today, she is cooking another item from the Sadhya menu, Olan. Learn how to make this delicious curry in no time!

Ingredients:

1/2 cup chopped ash gourd
1/2 cup water
Salt to taste
2 to 3 slit green chillies
1 cup thin coconut milk
1 cup thick coconut milk
6 to 7 curry leaves
1/3 cup Cow peas/ Vanpayar, soaked and pressure cooked till soft
1 tbsp coconut oil

Method:

- Combine ash gourd, salt, water and chillies in a pan. Cover and cook till ash gourd is partially cooked. Add thin coconut milk and continue to cook on a small flame for 5 minutes.
- Add cow peas and simmer for 5 to 7 more minutes. You can add curry leaves now.
- Add thick coconut milk and mix well. Simmer on low flame for a minute.
- Add raw coconut oil to gravy and mix well.
- Remove off flame and cover and keep aside for 5 minutes. Serve hot.
