Ingredients:1/2 cup chopped ash gourd1/2 cup waterSalt to taste2 to 3 slit green chillies1 cup thin coconut milk1 cup thick coconut milk6 to 7 curry leaves1/3 cup Cow peas/ Vanpayar, soaked and pressure cooked till soft1 tbsp coconut oilMethod:- Combine ash gourd, salt, water and chillies in a pan. Cover and cook till ash gourd is partially cooked. Add thin coconut milk and continue to cook on a small flame for 5 minutes. - Add cow peas and simmer for 5 to 7 more minutes. You can add curry leaves now.- Add thick coconut milk and mix well. Simmer on low flame for a minute.- Add raw coconut oil to gravy and mix well.- Remove off flame and cover and keep aside for 5 minutes.
