Another version of the popular street food recipe 'Pav Bhaji'. In this version the vegetables are kept intact instead of mashing them. Do try !KHADA PAV BHAJIIngredients1 medium green capsicum cut into cubes1 medium red capsicum, cut into cubes12-16 cauliflower florets1 medium carrot, chopped½ cup green peas1 medium potato, peeled and cut into cubesToasted pavs for serving 2 tablespoons pav bhaji masala 4 tablespoons butter1 large onion, finely chopped2 green chillies, finely chopped1 tablespoon ginger-garlic paste1 cup tomato puree2 tablespoons chopped fresh coriander leaves + for garnishing 1 tablespoon red chilli paste¼ teaspoon turmeric powder1 teaspoon red chilli powder Salt to taste Method1. Heat 2 tablespoons butter in a non-stick pan. Add green and red capsicum and sauté till soft. 2. Add cauliflower florets, carrot and green peas and toss well. Add potato and mix. Add some water, stir to mix and cook for 2-3 minutes. Remove from heat and set aside. 3. Heat remaining butter in another non-stick pan. Add onion and sauté till translucent. Add green chillies and mix. 4. Add ginger-garlic paste and mix. Add tomato puree and 1 tablespoon coriander leaves, mix well and cook for a minute. 5. Add chilli paste and mix. Add pav bhaji masala and mix well. Add turmeric powder, chilli powder and some water and mix well. 6. Add salt and cooked vegetables and mix. Add 1 tablespoon coriander leaves, mix well and cook for 2-3 minutes. 7. Garnish with some coriander leaves and serve hot with pavs, chopped onions and lemon wedges.
