Khada Pav Bhaji | Sanjeev Kapoor Khazana

Another version of the popular street food recipe 'Pav Bhaji'. In this version the vegetables are kept intact instead of mashing them. Do try !

KHADA PAV BHAJI

Ingredients

1 medium green capsicum cut into cubes
1 medium red capsicum, cut into cubes
12-16 cauliflower florets
1 medium carrot, chopped
½ cup green peas
1 medium potato, peeled and cut into cubes
Toasted pavs for serving
2 tablespoons pav bhaji masala
4 tablespoons butter
1 large onion, finely chopped
2 green chillies, finely chopped
1 tablespoon ginger-garlic paste
1 cup tomato puree
2 tablespoons chopped fresh coriander leaves + for garnishing
1 tablespoon red chilli paste
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
Salt to taste

Method

1. Heat 2 tablespoons butter in a non-stick pan. Add green and red capsicum and sauté till soft.
2. Add cauliflower florets, carrot and green peas and toss well. Add potato and mix. Add some water, stir to mix and cook for 2-3 minutes. Remove from heat and set aside.
3. Heat remaining butter in another non-stick pan. Add onion and sauté till translucent. Add green chillies and mix.
4. Add ginger-garlic paste and mix. Add tomato puree and 1 tablespoon coriander leaves, mix well and cook for a minute.
5. Add chilli paste and mix. Add pav bhaji masala and mix well. Add turmeric powder, chilli powder and some water and mix well.
6. Add salt and cooked vegetables and mix. Add 1 tablespoon coriander leaves, mix well and cook for 2-3 minutes.
7. Garnish with some coriander leaves and serve hot with pavs, chopped onions and lemon wedges.
