Ingredients Quantity
Chana dal crushed 2cup
Green chilies 4no. + 2-4no.
Ginger ½ inch
Salt to taste
Oil for greasing+ 1 ½ tbsp+ 1tbsp
Eno 1tsp
Water as required
Sugar 2 tbsp
Turmeric powder 1tsp +1tsp
Mustard seeds 1tsp
Hing 1tsp
Curry leaves 5-6no.


Method
1. Soak the dal for 3-4 hours and then grind it in the mixer grinder and let it ferment overnight.
2. Now in the mix grinder, grind ginger and green chillies by adding some water in it.
3. Once it is done add sugar in it and grind again.
4. Now mix the paste with the chana dal batter, add turmeric powder, salt to taste and mix it properly.
5. Meanwhile keep your steamer ready to bake the Khaman dhokla.
6. Tie the cloth on the lid so the dhokla does not get spoil.
7. Now grease the tray with oil and keep aside.
8. Now add little oil in the batter and mix it properly.
9. Now add water to adjust the consistency.
10. Now add eno in the batter so it gets fluffy and mix it properly.
11. Our batter is ready, pour it in the tray till half and put it in the steamer.
12. Let it steam for 16-18mins or till the stick comes out clear.
13. Now in a pan add oil, hing, green chilies slit, mustard seeds, and curry leaves and saute for a min and now spread it evenly on the Khaman dhokla.
14. Let it cool down and then cut it into pieces and serve hot.
15. Serve hot with green chutney.
