Masala Mathri using Rava, Sooji ki crisp Mathri, Punjabi Rava Mathri, Suji Ajwain Namkeen Mathri

Ingredients for Masala Sooji Mathri
Semolina (सूजी ) - 2.5 cups (450 gms)
Oil (तेल ) - 1/2 cup ( 110 gms)
Green Chilies (हरी मिर्च ) - 2 (finely chopped)
Salt (नमक ) - 1 tsp or to taste
Cumin seeds (जीरा) - 1 tsp
Carom seeds (अजवायन ) - 1 tsp
Oil (तेल ) - for frying

How to make Sooji Mathri
1. Take semolina in a mixing bowl. Add 1/2 cup oil to the semolina. Add finely chopped green chilies, salt, cumin seeds, carom seeds,crush the carom seeds with hands and then add it. Mix all ingredient.
2.Knead soft dough with lukewarm water,Cover and keep aside the dough for 20 minutes.
3. After 20 minutes dough is set and ready, squash the dough a bit. We have used a little more than 1/2 cup water.
4. Break lumps from the dough, then make ound balls and give peda like shape. Roll it out thick, then poke with a fork. Cover rest of the dough. Prepare 5 to 6 mathris first.
5. Put oil in a pan to heat in a wok, turn on flame. Check if oil is sufficiently hot,drop a small dough ball in the oil. If bubbles form, oil is hot enough. Keep flame minimum. Put as many mathri in the wok as they fit in to fry.Keep the flame medium.
6. Till mathris are fried, prepare rest of it likewise. When roasted from beneath, flip them and fry until golden brown.
7. Once golden brown and ready, lift them over a slotted laddle,hold the laddle on the edge of the wok. Put mathris in a plate. Fry all likewise, then turn off flame.

Serving:
8. Crispy and crusty Semolina mathri are ready.You can relish this sumptuous Mathris for over 2 months whe stores in an air tight container.
