Kheer | Holi Special Recipe | Sanjeev Kapoor Khazana

A rice pudding from the cuisine of the Indian subcontinent, made by boiling rice and flavoured with cardamom and dry fruits.

KHEER

Ingredients

¼ cup rice, soaked for 2 hours
5 cups milk
3-4 cloves
¼ cup sugar
½ teaspoon green cardamom powder
Chopped pistachios for garnishing

Method

1. Heat milk in a non-stick pan. Add cloves and bring to a boil.
2. Add drained rice, mix and cook till the rice is done.
3. Add sugar, mix well and cook till the sugar melts. Add cardamom powder and mix well.
4. Garnish with pistachios and serve hot.
